On the hills of Valpolicella, where the wine tradition is related with time, a sweet wine is born, telling a story of patience and dedication. The recioto of Valpolicella Classico by Antolini is entirely from the same grapes with which the amarone is made, the wine per excellence of Valpolicella. It is a wine that goes beautifully with traditional desserts, but also surprises with blue cheese or moments of pure meditation. Each drop is a tribute to the history of Valpolicella, an invitation to discover the beauty of tradition in a glass, even at the end of a meal.
My brother Stefano and I have been growing vines since 1992 on our own land in the hilly area of the municipality of Marano di Valpolicella, San Pietro in Cariano and Negrar. Since 1993 in the locality “Semonte”, in the municipality of San Pietro in Cariano, we own 1 hectare of vineyard. In 2000, in “Ca’ Coato”, in the municipality of Negrar, precisely in the hilly belt that extends between San Vito and Roselle, we bought a plot of about 2 hectares that we planted with varieties typical of the area, raised with guyot system. From the beginning, we have chosen to work with respect for the environment, practicing guided and integrated control in order to use as few pesticide products as possible.
The harvest of grapes for making Recioto is exclusively manual with selection of the best bunches placed in boxes dedicated to dry for a value of 40/50% on the total production of the vineyards; collection of bunches for Recioto only in worthy years. The color is garnet red with violet reflections. The perfume is fruity, intense and persistent, with notes of black cherry, blueberry and hints of violet, cinnamon and white pepper. The taste is sweet and harmonious, never stucky, fresh and extremely fruity; in the mouth it reminds of red fruit jam and cinnamon.
