Ca’ Morone is located in Valbrembilla, in the province of Bergamo, and produces different types of goat cheese. The cheese derives exclusively from goats which are fed following the local standards which manage to guarantee the freshness and palatability of their goats.
Milk, salt, rennet, charcoal.
It is a soft goat cheese, made with milk from carefully grown goats. The black “crust”, the result of a specially controlled curing process in contact with vegetable coals, protects something soft and creamy that is not seen until the cut: the taste, a little acidic and acetic, becomes friends with the scents of yogurt.
