In the valleys of Bergamo, the culinary tradition has its roots in a rich history, and the Scarpinocc de Parr are an emblematic example. These ravioli, with their distinctive shape, contain a tasty filling based on cheese, nuts and amaretti, following a recipe that has been handed down for generations. Unlike the classic casoncelli, they are characterized by their lightness and well-balanced taste.
