Cavalleri is a historic winery in Franciacorta. For centuries they have had large areas of land dedicated to cultivation, but it is only in the last few decades that their production of refined and quality bubbles has exploded. What distinguishes this winery is the meticulousness in caring for the vines, the attention to nature and the use of historical and traditional techniques for growing the vineyard. Despite the large number of bottles produced, Cavalleri is a safety, a cornerstone of absolute sparkling wine qualitiy production.
The color is intense straw yellow and has a fine and persistent perlage. The vineyards are cultivated in biodynamic agriculture. First fermentation, with indigenous yeasts, in steel and in large oak barrels. Partial malolactic.
